Cavalcabò / ENGLISH VERSION

DESIGNATION: Lambrusco Mantovano DOP rosso frizzante secco (slightly-sparkling red dry Lambrusco DOP)
THE LOOK: optimal intensity, ruby red colour, strong opacity. Purple-ish foam, specific feature of this grape variety.
THE SMELL: intense wine aroma, subtle, with hints of fruit. Sweet violet, sour cherry, ripe wild berries aromas. 
THE TASTE: full and elegant flavour, of prolonged persistence, with ripe red fruit aftertaste. Harmonious and well structured.
ACCOMPANIMENT: accompany with typical dishes from the cuisine of Mantova, agnolini, cotechino, zampone, grilled meat, charcuterie and seasoned cheese. 
TEMPERATURE OF SERVING: 18 Celsius degrees.
ALCOHOLIC CONTENT: 11.5% degrees.

Description
Cavalcabò is a sparkling Lambrusco, only made with grapes of local grape varieties coming from the area of Viadana, purely grown and selected within the area of the municipalities of Viadana and Sabbioneta, where this grape variety has been grown for centuries.

This grape variety from Viadana releases in this bottle, thanks to the features of the land where it grows, a harmony of flavours and scents with a peculiar strong purple coloured foam.

Up until last century, only few knew of the Viadanese grape variety, which is widespread only around Viadana and Sabbioneta. When the agronomist and economist Ugo Ruberti discovered it, at the end of the nineteenth century, he particularly appreciated it and contributed to its spreading through the whole area surrounding Mantova. 

This wine is dedicated to the memory of the ancient landowners of our lands: the Cavalcabò family. Emperor Frederick I nominated them marquis of Viadana in 1158, and for some decades thay governed our lands expanding their territory, which now stretched from Parma to Cremona.

Vespasiano / ENGLISH VERSION

DESIGNATION: Lambrusco frizzante rosso IGT (red slightly-sparkling Lambrusco IGT)
THE LOOK: purple-ish foam, intense ruby red colour.
THE SMELL: sweet violet and marasca cherry aromas. 
THE TASTE: enveloping flavour, reminding the aromas.
ACCOMPANIMENT: accompany with traditional dishes from Mantova, Bolognese sauce pasta, polenta pasticciata with mushrooms and sausage.
TEMPERATURE OF SERVING: 15-18 Celsius degrees.
ALCOHOLIC CONTENT: 11% of the volume.
PACKAGES: 0.75 litres Emilian bottle with 
mushroom-shaped cork – 6 bottles carton box.

Our land’s typical joy and conviviality in a Lambrusco wine that suits everyday life. 
It’s a traditional wine of the area, the most suitable for everyday life, because of its 
economic price and its being of quality while still maintaining taste and texture. 
Lambrusco di Mantova Secco IGT is a true flag for the area of Mantova, translated into flavours and aromas that are ideal for the accompaniment of a convivial meal.
It’s a wine that preserves and represents tradition, result of an ancient wine-making 
culture and a selection of wines elaborated through the decades.
In the image we see Vespasiano Gonzaga, who extended to our region the cultivation of several Lambrusco wine types, by importing grapevines from different parts of Italy, in order to find the most suitable grape varieties to grow in our marshy lands.
The diffusion of Lambrusco allowed the selection of the best varieties and made it possible for common people to drink a wine whose quality was better and costed less, as until then, good wine was a luxury that only rich men could afford.

Il Salico / ENGLISH VERSION

DESIGNATION: Provincia di Mantova Lambrusco IGP frizzante (slightly-sparkling Lambrusco IGP)
THE LOOK: dark pinkish colour, strawberry currant and pomegranate, persistent foam.
THE SMELL: cherry aroma. 
THE TASTE: fresh flavour, with peculiar sourness and with an aftertaste of ripe cherry and pomegranate. 
ACCOMPANIMENT: best if accompanied by medium 
seasoned or fresh cheese, braised cacciatore chicken, 
charcuterie, fish, fresh salads.
TEMPERATURE OF SERVING: 8-10 Celsius degrees.
ALCOHOLIC CONTENT: 11% of the volume.

Description
This Lambrusco Provincia di Mantova reveals its softer trait with 
Il Salico, pinkish-coloured and with a lighter texture, ideal for 
summertime and enjoyable with light dishes.
The name of this wine is a tribute to our land’s history and, more 
specifically, to emperor Conrad II “Il Salico”, hosted in Viadana in 1038, 
who proclaimed a law about hereditability of nobiliary feudal contracts.

Krasì / ENGLISH VERSION

Krasi

DESIGNATION: Vino Spumante Dry Rosé (dry sparkling rosé wine)
THE LOOK: antique rose colour with shades of the colour of Cigliegiolo wine. Subtle effervescence, pink foam, intense and persistent.
THE SMELL: fruit aromas, such as currant, raspberry and rose. 
THE TASTE: fresh flavour, with balanced sourness and rather persistent. 
ACCOMPANIMENT: good as an aperitif, best if 
accompanied by appetizers, medium seasoned cheese, charcuterie, white meat and fish dishes (e.g. fried freshwater shrimps). Very good accompaniment for asian cuisine.
TEMPERATURE OF SERVING: 6-8 Celsius degrees.
ALCOHOLIC CONTENT: 11.5 degrees.

Description
The most elegant and light soul of the territory and the grape variety which takes its name from the small area around Viadana are concealed in this sparkling wine.
It’s a sparkling wine with delicate hints and subtle effervescence, result of an equally 
delicate processing: crushed grapes undergo a very light maceration process, followed by an accurate cleaning of the must and a long second fermentation inside an autoclave, 
according to the Martinotti technique. 
This modern and more appealing name actually comes from an ancient Greek word that means “wine”. During the Byzantine era, this word substituted the word “oinos” that indicated mostly the darker varieties of wine, whereas “krasì” indicated a lighter wine (which in antiquity was even mixed with water in order to make it less strong), just like our Krasì.
Our Krasì is made with the intention to be a suitable sparkling wine to for lighter celebrations of your most beautiful moments and accompany conviviality thanks to its mildness.

Cantinon / ENGLISH VERSION

DESIGNATION: Provincia di Mantova IGP rosso frizzante semi secco (slightly-sparkling, semi-dry red IGP Provincia di Mantova)
THE LOOK: intense ruby red colour, strong opacity, 
purple-ish foam.
THE SMELL: Intense wild berries and currant aromas and 
a hint of sweet violet.
THE TASTE: subtle and fresh flavour, good persistence.
ACCOMPANIMENT: accompany with charcuterie, grilled meat, red meat, Gramigna pasticciata alla salsiccia (typical Emilian first dish, pasta with sausage). 
TEMPERATURE OF SERVING: 18 Celsius degrees.
ALCOHOLIC CONTENT: 11% of volume.

Cantinon is a semi-dry Lambrusco, dark-coloured and very enjoyable to the taste. Of our wines it’s the one that female customers appreciate the most, with a good texture and a good mixture of aromas that make its 
degustation very enjoyable. Ideal for those who are not particularly fond 
of the typically dry taste of Lambrusco and prefer a softer but not less 
valuable and tasty version of the wine.
Cantinon recalls the tradition of mixing grape varieties with higher sugar content, in order to make the wine taste sweeter. 
This product’s name is meant to recall the old surname of our winery: “il cantinon”, meaning literally ‘the bigger winery’ is the way people of the 
area have been calling our building for over a century.

Nustran / ENGLISH VERSION

“Nustràn” is a sparkling Lambrusco wine which is obtained thanks to a pure brewing of local grape varieties, exclusively belonging to the “Lambrusco Viadanese” (from Viadana) type. The long fermentation process of its yeasts and the careful bottle-fermentation make it one of a kind. The prolonged brewing phases are in harmony with the turning of seasons and allow aromas and flavours to be well amalgamated: in so doing, acidity is dispersed, and the bottle is characterised by the true emerging of the identity of this wine variety.
Nustràn (ours) has always been called this way in our lands: so it is nowadays still called by those who produce it, so is the denomination of our local grape variety. From this strong bond to the land and to the past, comes the name of this bottle, exclusively made with local grape varieties, purely brewed.
Even prior to the official denomination of the grape species “vitigno Viadanese”, our ancestors, unbeknownst of the importance of their variety, named as Nustràn (ours) that species of grape which had found in this territory its ideal propagation environment. The helping hand comes from the moist climate and the alluvial terrain, typical of these swampy lands which bordered rivers such as the Po before levees were built.
